The famous American casual clothing store “EARTH MARKET” launched an American style diner mainly serving hamburgers. They define this diner as a food entertainment. Diner staff have a lot of knowledge about each item decorating the diner. Regarding an interior design, we mainly used wood and coordinated it with iron materials. Our aim was to establish a relaxing mood by using garage like elements, lightings, and displays. We made walls and beams in ceilings functional enough to be able to put more clothes and goods in the future and use this space as a gallery. Because we also made several layers in this space, it wouldn’t give you messy impression. You’d rather feel three-dimensional and artistic effect by that. Like denim pants getting aging effects, we hope this space piles up more atmospheres and tastes and becomes better place across the ages.（Mitsuru Komatsuzaki／Design Atelier Rondo）

アメカジ・ダイナー

アメカジショップで全国的に知られる「EARTH MARKET」が、フードエンターテインメントとして展開する、ハンバーガーをメインにしたアメリカンダイナー。商品知識が豊富なスタッフへ相談もできるサロンとして、EARTH MARKETがプロデュースするBrand SALON-LINKのコンセプト店舗です。空間は木を基調としながら鉄材と調和させ、ガレージ的な要素に照明やディスプレイで寛ぎ感のある雰囲気の構築を目指しました。アメカジの服やグッズなどもギャラリー的に設置できるように壁面意匠や天井梁を機能的に演出し、今後、雑貨などが増えて乱雑に置いても絵になるように、空間に層を付けて視覚的に立体感を感じられるようにしています。経年変化していくデニムのように、味と雰囲気を積み重ねていく良い空間に仕上がったのではないでしょうか。（小松崎充／Design Atelier 円舞）

HKのショッピングモールにある日本式焼肉店です。和テイストとして、和色とパターンの連続性を、パーティションに取り込みました。茜色、萌葱色、漆黒、紅桔梗、月白。日本古来より伝わる独特の色名は、日本人がこよなく愛する自然の名前が入っているものが多いと思います。それらの色を線で表し、陰影とテクスチュア感を与え、その隙間を強調。店に透明感を持たせるようにしました。深さがあり柔らかく、視線が突き通るように感じることができます。（小川訓央／Shanghai RID）

This is Japanese steak house located in a Hong Kong’s shopping mall. In order for the store to have a Japanese taste, the interior is designed with traditional Japanese colors, with the usages of continuous patterns and partitions to separate the seats. Colors such as akaneiro (madder), moegiiro (spring green), shikkoku (carbon black), benikikyo (dark blue) and geppaku (moon white) were applied. These ancient Japanese names given to the colors originate from nature, which is passionately loved by the Japanese. The colors are expressed in the form lines with a sense of texture and shading which emphasize the interspace between each line giving transparency into the store. This creates the space to have depth as well as softness and it feels as if one’s eye can penetrate the whole store. (Kunio Ogawa/Shanghai RID)

StarEight is a new steak house situated at one of the warehouse buildings within a 100-year old factory compound in the city of WuXi, China. A historical re-vitalization design strategy was adopted to preserve most of the original building features with addition of new mezzanine structure to maximise the spatial potentials and turned the old warehouse into a hip F&B landmark.

A main scene of “Starry Night Dining” was created to move the traditional Steak House dining experience to a new level of trendiness and romance. Various seating patterns were created in the two dining zones to cater for different customer needs:

Atrium Dining Zone –

Original building features of the10m high pitched roof skylight, truss structure, exterior brick & interior fare-faced cement walls, window frames were well-maintained and exposed to the eyes of the customers.

2m high bull-shaped partition made by knifes & forks gave clue and defined brand identity to the restaurant. Verticality & spaciousness of the atrium dining zone were emphasized through full-height mirror stainless steel wine rack and crystal chandelier above the VIP table. Ceiling suspended fibre optics in violet colour created starry night effect to the leather-upholstered central & periphery booth seating areas.

Mezzanine Dining Zone -

New built steel structure mezzanine floor was introduced to provide a semi-enclosed dining zone. VIP area with black & white bull-patterned ceiling-wall and floor lamps gave cosy & home feelings to the space, sliding semi-transparent curtains provided flexible partitioning for holding different events. The romantic starry night experience was finally completed at the black-mirrored washrooms and left an unforgettable memory to the customers.

「ITALIAN ＆ DOLCE CAFE AMARANTI」は、「五感に訴え、女性が行きたくなる」をコンセプトにデザインしています。喫煙者・非喫煙者がストレスを感じない、そしてさまざまな人が一緒に食を楽しめるシーンを演出しています。中2階と、その奥にある個室を喫煙エリアとし、ガラスの壁や区画するのではなく、最奥に強制の排気設備を設け、負圧にすることで、空気の流れをコントロールし、禁煙席に煙が流れないようにしています。禁煙席との境界となる中2階の円形ソファ席背面には、分煙をより確実にするため、エアーカーテンを配置。また、天井の仕上げには室内浄化や消臭効果のある竹炭を混ぜた塗装を、天井ダウンライトにはマイナスイオンを発生させるLEDで煙の分子を抑え、タバコの煙を除去する光源を取り入れました。三つの異なった効果を合わせることにより、お客様に細やかな心配りをし、より快適な空間で食を楽しめる、クリーンな新しい分煙空間を実現しました。（奥山裕／乃村工藝社）

静岡県掛川市、昼はカフェ、夜はレストランとバーを営む「ORZO」。カフェ／バー、昼夜の二つの表情を併せ持つ空間は、明確に仕切らず、常に片方の横顔が見え隠れするよう配置した。色や形の異なる瓶が並ぶバーの棚と、山を象ったモチーフを並べたカフェの壁。掛川へ向かう新幹線の連窓から眺めた富士山の姿が印象に残ったのかもしれない。連続的なモチーフを配置することで、意識／無意識すら無自覚のままぼんやりと、しかしずっと眺めていたいと思える景色を置いた。（美和小織／LITTLE）

Located at Kakegawa-shi in Shizuoka-ken, ORZO is a café during the afternoon and a restaurant bar at night. Its welcoming space changes its expression during day and night as a café and bar which is designed to thinly veil one another when seated. Bottles of various colors and shapes line up at the bar counter and the motif on the walls resemble a continuing panorama of the mountains. Perhaps it is influence by the beautiful view of mount Fuji which one can enjoy from the Shinkansen when approaching Kakegawa-shi. The continuing motif of mountains on the wall invites one to stare at them and to consciously or unconsciously let one mind to drift away.（Saori Miwa／LITTLE）

珠光の弟子である栗田口善法は、酒の燗をする鍋の他は道具をひとつも持たず、これで食事の湯を沸かして茶の湯を楽しんでいた、侘びた風情の極地と云われる伝説の茶人である。善法は名のある道具や茶室がなくても、「茶の精神」を理解した者が作法に縛られず愉しんで人をもてなすところに「茶道」の心が存在すると考えた。「nanaha草」（ななはそう）は、日本茶のスローフードスタイルのカフェである「七葉」に対して、茶の世界の「真・行・草」という概念から、「真」の七葉より、もっと広く日本食を楽しんでいただくため、日本食とワインの新しい楽しみ方のスタイルを提案する「七葉」を最もくずした形の「草」のダイニングである。そこで、私は茶の湯を最も自由に考えていた栗田口善法の燗鍋（かんなべ）をモチーフにデザインし、それぞれの客席と対となった燗鍋を天井に設け、それのみが空間の意匠となり、また照明器具となるように設計した。私はここで、野点の「いさぎよきところ」を探すように、「いさぎよきどうぐ」を選んでいただける空間となればと考える。（吉田昌弘／KAMITOPEN一級建築士事務所）

Zenpo Awataguchi who is the apprentice of Shuko Murata and also a legendary tea master of the ultimate feel of “wabi”, was enjoying his meal by boiling hot water for his Japanese tea with no other instrument but a pot for hot sake called “okan”. Zenpo thought that even with no possession of famous tools nor a tea room, the heart of “sado” exists in those who understand the “spirit of tea” and can entertain others without being bound by manners. In contrast to the “formal” or “Nanaha”, which is a slow food style of Japanese tea café, “Nanahaso” is a deformed version of “So” or “informal” dining which proposes a new style of enjoying Japanese food with wine under the concept of “formal, semiformal and informal” philosophy of the world of Japanese tea. Therefore, I chose Zenpo’s Kannabe as the motif of my design because he practiced the tea room with most freedom. Kannabe pots are set against each seat at the ceiling and are designed to be the lightings of the room creating a unique space. In the open air tea ceremony one is to seek for the “graciousness of space”, here I hope it becomes a space where one finds the “graciousness of instruments”. （Masahiro Yoshida／KAMITOPEN）

「Janus dining」はカジュアルな創作イタリアンレストラン。同ビル5階には「Music Club JANUS」があり、「Janus dining」は音楽を楽しむ一日のストーリーを演出する場所となる。プロローグではハイカウンターのバーエリアでテンションをあげる一杯、そしてライブの後にダイニングエリアで乾いたのどを潤し、エピローグには暖炉を設えたラウンジエリアで余韻を分け合う。音楽を堪能するライブとその前後の時間を過ごす空間のいい関係が、音楽とデザインを繋げる。すべてが一体となって魅力的な場が生ままれる。この空間では、大人のロックを素材の質感を組み合わせることで表現した。アイアンやタイル、レンガに加え、ボトルを利用した照明、張り地を新しくしたユーズド家具など、リユースされたモノが味わいとムードを醸し出す。主な木材は、大阪・中之島デザインミュージアム「de sign de >」の展覧会で会場構成に使用されたものをリユースした。一度使い古されたものが再び流通し、新たな表情をもって空間の一部となる。それぞれのストーリーが重なり、独特の空気感を生み出す。遊び心のある設えは都会的だがナチュラルさのあるミックス感。「Janus dining」は肩の力を抜いて自由と刺激を楽しむ場所である。（間宮吉彦／インフィクス）

リーガロイヤルホテルの水と緑に囲まれた開放的なスペースに、262席を誇るダイニング「REMONE」が誕生した。この店舗を設計する上で私たちが一番に考えたのは、周りに広がる素晴らしい庭園の魅力を最大限に生かすこと。入店前、入店後ともに庭園を存分に眺めることができるよう、見晴らしのよい環境づくりと客席配置を考慮した。そして、昼間だけでなく夜の姿も満喫してもらえるよう、植栽へのライティング計画も施している。また、庭園の魅力を感じながら食事を楽しむことができるよう、池の上にテラス席を設けた。さらに店内のカーペットには、この池とそこに浮かぶ植物のモチーフを描いて外の庭園と内の客席をつなげる効果を与え、より自然を感じることができる空間を考えた。もうひとつ我々の課題となったのは、目玉であるビュッフェカウンターが、いかに存在感を高められるかということであった。そのため、オープンキッチンとその隣りにある坪庭を取り囲むよう、全長26mもの曲線状のビッグカウンターを計画している。(松浦竜太郎／乃村工藝社、文責BAMBOO)

名古屋市内を中心に6店舗を展開する豆家グループ様の新店です。クライアントと共に作りあげたコンセプトは「思いやり」。名古屋駅からわずかに離れた、人通りの少ない立地にたたずむ建物は、元は住居でした。暖簾をくぐると、優しいトーンの木目の表情がゲストを出迎えます。席へ通されるまでのナグリ加工の床が素足に心地よく、お花の活け込みは目を楽しませます。花器には、陶磁器の町・多治見で出会った作家さんの陶器を用いました。別注の鋳物のカウンター壁と天井格子組は、ゲストお気に入りの料理長の誠実な仕事を喚起させます。昔からそこにあったような、けれど古くない、何気ない存在感。美味しいお料理を楽しんでいただくための「仕掛け」をデザインしました。是非「福福」をご賞味ください。（渡部光樹／神谷デザイン事務所）
