「無国籍ビストロ 錨屋」は、住宅街に建つビルの3階にある、産直の魚介を使った無国籍居酒屋です。通常であれば、住宅街の空中階物件は認知・集客が難しいため出店は避けるものですが、ルーフトップテラスがあり、窓も多く、風が抜ける気持ちの良い物件だったことから、オーナーは出店を決断されました。
ダイニングバーの居抜き物件でしたが、不要な造作はすべて解体、間仕切りのない大きな空間に戻し、風が通るようにしました。壁はコンクリートのままとすることで、物件の持つポテンシャルを最大限に引き出しています。オーナーがイメージされていた“錨を下ろしてゆっくり”できる店とするため、節有りの木材、コンクリート、白・グレーの塗装をベースに、ニュートラルな空間としました。また、いかだをモチーフにしたアートワークや、イカ釣り漁船からインスピレーションを得た裸電球のペンダントライトを添えることで、マリンテイストをほのかに感じる空間に仕上げています。
客層を絞らないニュートラルな空間としたことで、昼は主婦層のカフェやブランチ利用、夜は仕事帰りのサラリーマンやOLのグループ利用や一人飲み、子供連れでのディナー等、すべてのシーンにおいて利用しやすい店になったと思います。

“Fusion Bistro Ikariya” is located in 3rd floor of a building surrounded by residential areas. The bistro offers fusion cuisine with fresh fishes directly delivered from the sea. Usually, owners avoid opening a store in higher floors in residential areas because it’s hard to pull in customers. But in this case, the owner decided to open the store because the building has a rooftop terrace and many windows and thus well-ventilated and comfortable. The former owner ran a bar and there were many furniture and fixtures but we almost demolished rooms and recovered the original unpartitioned and well-ventilated space. We kept concrete walls as they were in order to maximize the potential of the space. The store name “Ikariya”-ikari means anchor in Japanese- comes from the owner’s expectation to the guests staying comfortably in the place just like anchoring. In order to realize it, we adopted gnarled lumber, concrete, and white or gray paint and then created the neutral space. We also placed artworks in the motif of raft and naked bulb pendant lights inspired from squid-fishing vessels. Guests can smell a whiff of marine taste in the space. Because the space was kept neutral and targeted customers weren’t segmented, the bistro welcome housewives’ café or brunch in the lunchtime and business people or family’s dinner in the evening time.
