青森の星野リゾート奥入瀬渓流ホテル内に「ソノール」が完成しました。ホテルが奥入瀬渓流の国立公園内に建つこともあり、奥入瀬渓流の大自然を感じながら奥入瀬ならではのフルコースを味わっていただくフレンチレストランです。
目指したのは、星野リゾートならではの体験型のレストラン。国立公園内という恵まれた自然環境を存分に活かした贅沢体験と、星野リゾートが提供する一流の料理とサービスが共鳴することで、ここでしか味わえないドラマティックで刺激的な、唯一無二の体験を作り出すことでした。しっとりと落ち着いた受付からのエントランスアプローチは、先が見えない閉鎖的な空間です。そこから、ドアが開くと目の前には奥入瀬渓流沿いの森の中という外部空間にたどり着きます。そして、渓流アペロと名付けた渓流沿いの外部テラスにて、まずは食前酒と奥入瀬の食材を使ったアミューズを堪能してもらいます。そして、また閉鎖的なアプローチを通り抜けると、今度は室内のオーセンティックなメインレストランが目の前に広がり、フルコースの続きと最高のワインを味わうという、ゲストが移動しながらレストランを体験するサービス形式です。
デザインのテーマは、奥入瀬の大自然と語り合うこと。奥入瀬の森の中だからこそできるデザインを目指しました。渓流アペロでは、現地でデッキスペースとタープの形状と位置を決定しています。それはCADで図面化できるものでもなく、森の形状や木々の生え方を見ながら決めていくという作業でした。また、メインレストランでは、森の木々を使ったシャンデリアやパーティションやアートなどで、オーセンティックな空間にアクセントを加えていきます。その他、店内奥の壁面は奥入瀬の八甲田山の噴火から形成された岩壁をイメージした擬岩壁が圧倒的な存在感を醸し出しています。
奥入瀬ならではの食を通じたドラマティックな非日常という、”体験”をデザインすることができたと思います。（藤井文彦／ファン）

Restaurant Sonore has been opened in Hoshino Resort Oirase Keiryu Hotel in Aomori prefecture, Japan. This hotel is built in the national park of Oirase mountain stream, and it is a French restaurant that you can enjoy the full course unique to Oirase while feeling the nature of Oirase mountain stream.
We wanted to produce an experience-based restaurant unique to Hoshino Resort. A luxury experience taking advantage of the blessed natural environment of a national park, and first-class cuisine and services provided by Hoshino Resort. By making he resonance between these two elements, we aimed to create a dramatic, exciting and unique experience that guests can enjoy only in the restaurant.
From the reception area with calm atmosphere, you go into the closed space with a door, where you cannot see what will be ahead. Once you open the door, you are in the outside space in the woods facing to the Oirase mountain stream right in front of you. The space on the wooden deck space along the mountain stream is named “Apelo”, where you enjoy an aperitif and amuse bouche using local ingredients from Oirase for around an hour. After “Apelo”, you once again walk through a closed space and enter into the authentic main restaurant inside of the hotel, where you can enjoy the full course of the French cuisine and the best wines. You literally experience the restaurant by moving.
The theme of the design is to talk with the nature of Oirase. We wanted to design what can be created only in the forest of Oirase. In Apelo by the mountain stream, we designed the shape and the positions of the deck space and the tarp at the site. They are not something that you could make into drawings by CAD, but it is work of deciding them while looking at the shape of forests and how to grow trees. Also, in the main restaurant, we added an accent to the authentic atmosphere such with the chandeliers, the partitions and the art works using wood from the forest. In addition, the main back wall of the restaurant is finished with a pseudo-rock wall with an image of a rock wall formed from the eruption of Mt. Hakkoda in Oirase and gives overwhelming presence of it.
We believe we were able to design an dramatic and extraordinary “experience” through cuisine using various ingredients unique to Oirase. (Fumihiko Fujii/ fan Inc.)

在位于青森的星野集团奥入濑溪流酒店内打造了Sonore餐厅。酒店建在奥入溪流的国立公园内，这是一间可以边感受奥入濑溪流的自然之美，边品尝奥入濑独有的法式全餐的法式餐厅。
目标是打造星野集团特有的体验型餐厅。通过充分利用国立公园内得天独厚的自然环境的奢侈体验，与星野度集团提供的一流美食与服务产生的共鸣，创造出只有在这里才能感受到的具有戏剧性一般刺激的，独一无二的体验。从幽雅恬静的入口接待处开始的通路走廊，是个一眼望不穿的封闭式空间。打开门，映入眼帘的便是置身于奥入濑溪流沿线森林之中的外部空间。此外，可以巧妙的在被命名为溪流Apero的溪流沿线露台处，首先品尝餐前酒与开胃菜。再穿过封闭式通路走廊，这一次便是室内正统的主餐厅随即跃入眼帘。在这里可以继续品尝法式全餐和最好的葡萄酒。客人可移动就餐的同时，又能体验餐厅的服务形式。
设计的主题是与奥入濑的大自然融会贯通。目标是只有在奥入濑的森林之中才可以实现的设计。溪流Apero是以实际甲板空间与篷布的形状与位置来决定的。这是CAD平面化所不能完成的，是用边观察森林的形状与树木的生长走向边决定方案的形式来完成的。另外主餐厅的吊灯、间隔以及艺术等使用了森林原木，使得正统空间加入了点睛之笔。另外还有，店内里侧的壁画是根据奥入濑的八甲田山喷发所形成的岩壁图案绘制的仿岩壁，酿造出压倒性的存在感。
我们认为通过奥入濑独有的特色饮食，设计出了戏剧化非日常的体验。（藤井文彦／fan Inc.）
